Under the watchful eye of our Master Distiller, the liquid is initially matured in American white oak ex-bourbon casks. This gives its first base of soft vanilla and honey notes. The whisky is then transferred to Gonzalez Byass casks which have held 30 year old Matusalem oloroso sherry. Here it spends an extended period of maturation in the exquisite casks that are exclusively reserved for The Dalmore.
